Chicken Soba Noodles
(A bowl of noodles with the rich flavor of chicken and the aroma of the asari clams) We use a white soup taken from the chicken thigh bones (less gaminess) and combine it with an aromatic broth taken from kombu kelp, dried bonito and asari clams, full of umamil. To this we add an Yuasa soy sauce infused with shrimp and dried scallps. It is a very recommendable dish so please try it!
